Summer is the perfect time to gather with friends and familyâand you donât need heavy meals or processed foods to impress a crowd. I recently hosted a simple and delicious healthy summer hangout that was refreshing, nourishing, and full of flavor. Hereâs the full menu and exactly how you can recreate itâincluding my go-to ceviche recipe, wholesome snacks, and a dreamy protein-packed dessert.
đż Why This Summer Recipe Works
This is my favorite way to host because itâs:
Fresh and full of real ingredients
Simple to prep ahead of time
Balanced, with protein, fiber, healthy fats, and flavor
And SO GOOD that no one misses the processed dips from a box
đ Easy, Authentic Ceviche Recipe
Not everyone has tried cevicheâand if you havenât, this is your moment.
Itâs a no-cook fish dish that âcooksâ in lime juice. Itâs refreshing, protein-rich, and perfect for hot weather.
âš Ingredients:
1 lb fresh sea bass (or any firm white fish: snapper, halibut, cod)
~12 limes, juiced (enough to fully submerge the fish)
1/2 red onion, finely chopped
2 medium tomatoes, diced
1â2 serrano chiles, finely chopped (or jalapeño for less heat. -I remove the seeds so it’s not as spicy)
1 celery stalk, finely chopped
1â2 ripe avocados, diced
1/2 bunch fresh cilantro, chopped
1 cucumber,diced
Sea salt and pepper, to taste
đ„Ł Instructions:
Chop the fish into small cubes (make sure it has no bones or skin). Place in a bowl with the lime juice and chopped red onion. Mix well.
Cover and refrigerate for about 2 hoursâthe lime juice will âcookâ the fish until itâs opaque.
While that marinates, prep the rest: chop tomatoes, celery, serrano, avocado, and cilantro and mix all very well.
After 2 hours, drain a bit of the lime juice if needed, then stir in your chopped veggies and avocado.
Add sea salt to taste. Serve chilled!
đĄ Note from me: I squeezed all those limes by handâyou can totally use a citrus juicer, but I say it builds character đ My Mexican hands are used to it!

This is my favorite kind of gatheringâfresh, vibrant, and nourishing, but still feels like a treat. You get high-quality protein, healthy fats, fiber, and a variety of textures and flavors. Perfect for hot days, beach hangs, backyard parties, or just making something special for your loved ones.
