Looking for a delicious, low-carb or breakfast option that is high in protein and fiber? These banana blueberry chocolate chip muffins are not only nutritious but also super easy to make. Perfect for meal prep or a grab-and-go breakfast!

Dry Ingredients:
- 134 grams of organic psyllium husk fiber (approx. 1.68 cups)
- 3/4 cup of organic coconut flour
- 3/4 cup PB2 Almond protein powder or cashew powder
- 5 scoops of FlavCity Vanilla Cream Protein Powder
- 1 tbsp allulose sweetener
- 2 tsp baking powder
Wet Ingredients:
- 2 semi-ripe bananas (about 1 cup, mashed)
- 1 cup of organic grass-fed Greek yogurt, or Skyr
- 4 eggs (preferably organic and pasture-raised)
Optional Add-ins
- Chocolate chips Lily’s (my go-to)
- Or, chocolate chips Back to Human (the ones I used on the video)
- Frozen Blueberries

- Preheat your oven to 350°F (190°C).
- In one big bowl, mix together all the dry ingredients (except for the chocolate chips).
- In another bowl, combine all the wet ingredients: eggs, Greek yogurt, and mashed bananas.
- Pour the wet mixture into the dry ingredients and mix until everything is thoroughly combined.
- If you’re adding chocolate chips or blueberries, gently fold them in at this point.
- Divide the mixture into your muffin molds and bake for 12-13 minutes, or until a toothpick or knife inserted into the center comes out clean.
- If you made extra, store your muffins in a glass Tupperware and keep them in the fridge for up to 4-5 days, or freeze them for longer storage.

For Chocolate Chip Cookies:
- Follow the same steps, but shape the mixture into cookies and place them on a baking sheet about 1 inch apart.
- Bake at 350°F for about 8-9 minutes.

For extra deliciousness, top your muffins with:
- A 1/4 cup of Greek yogurt mixed with a little chocolate protein powder (or your favorite flavor)
- Fresh or frozen raspberries and blueberries
- A sprinkle of cinnamon
